DESCRIPTION OF THE ACTIVITY
A journey through the authentic flavors of Tuscany, born from the encounter between two local excellences: Dievole wines, ambassadors of Chianti Classico, and cheeses aged by Andrea De’ Magi in his caves between Arezzo and Siena. Rooted in shared values such as craftsmanship and a desire to experiment and narrate the region through a fusion of flavors, De’ Magi has created three cheeses, each aged using raw materials from Dievole, such as grape pomace, olive husks, and fine lees.
The cheeses have been refined with the pomace of our iconic Riserva Novecento, the fine lees of Campinovi Trebbiano Toscano, and the olive husks from the production of our Chianti Classico DOP olive oil. These three unique products encapsulate the notes and aromas of our wines and the essence of our estate and territory, pairing perfectly with their respective wines to create a harmonious fusion of flavors.
The experience will begin with a visit to the winery and the fascinating barrel room, where the wines rest in large, untoasted French oak barrels. A guided tasting in the wine shop will follow, featuring the three wines paired with the three cheeses in a carefully curated journey designed to enhance the harmony of the pairing and unveil all its secrets.
